Now the best way to get coconut milk is from the meat of organic, mature coconuts. However, most of us don’t have the time to crack open dozens of coconuts and trying to squeeze out the milk. Luckily for us, there is coconut milk in a can or as a powder. If you choose canned coconut milk, always choose the no added sugar options. Sometimes coconut milk is sold as either thick or thin versions. The thick milk does have more fat than the thin kind, but you can always save a bit of money by diluting thick milk with water. For instance, you could use ¼ cup of the thick coconut milk with a ½ cup of water instead of using ¾ of a cup of the thin coconut milk. The choice is entirely yours, of course.
