1. Paleo Stuffed Bell Peppers

  • 5 Organic bell peppers, any color
  • 1 Pound ground Italian hot sausage
  • ½ Head grated organic cauliflower ( or use your food processor to make cauliflower rice)
  • 1 Small white organic onion, chopped
  • 1 Small can tomato paste
  • 5 Cloves of organic garlic
  • Seasonings of your choice. Suggested: basil, oregano, and thyme

Mix all ingredients in a bowl (except for the bell peppers). Cut the tops off the peppers and remove the seeds. Stuff the peppers with the sausage mixture. Freeze upright for later use, or place in slow cooker on low for about 6 hours. Add a little water to the bottom of the slow cooker to keep the bottom of the peppers from burning.

2. Paleo Easy Hawaiian Chicken

  • 4 Free range chicken breasts
  • 1 Cup of your favorite BBQ sauce
  • 1 Cup canned pineapple chunks
  • 3 Cloves organic minced garlic
  • Salt and pepper to taste

Place all ingredients in a freezer bag and freeze for later use or place in crock pot on low and cook for 6 to 8 hours. This has got to be the easiest dinner of them all. If you do freeze this meal, defrost it overnight in the refrigerator for use the next day.

3. Paleo Maple Dijon Glazed Chicken Breasts

  • 1.5 Pounds of free range chicken breasts
  • 1 Cup Dijon type mustard
  • ½ Cup of real maple syrup ( not pancake syrup)
  • 2 Tablespoons of red wine vinegar
  • Salt and pepper to taste

Place all ingredients into a freezer bag and freeze for later use. Like the Hawaiian chicken, take bag out of freezer and allow to thaw in the refrigerator overnight before cooking. Or you can place all items directly into the crock pot and cook on low for 6 to 8 hours. Sprinkle a bit of rosemary over the top just before serving.

4. Paleo Sausage and Onion Mix

  • One 12 to 16 ounce package of sausage, any kind
  • 1 Organic red, green, and yellow bell pepper, seeds removed
  • 1 Large organic white onion chopped
  • 15 Ounce can of diced tomatoes
  • 4 to 6 Organic minced garlic cloves
  • Italian seasoning to taste

Mix everything together in a freezer bag and freeze for later use. No need to thaw overnight, this can go directly into the slow cooker when you are ready. Place in slow cooker set on low for 8 hours.

5. Paleo Apple and Pork Chops

  • 1 Bag or large can of sauerkraut (read more how sauerkraut can detox your body from GMO’s)
  • 4 Pork chops ( Use thick slices, not thin cut)
  • 1 Half of an organic Granny Smith apple cut into small slices
  • 1 Medium organic white onion, chopped
  • Salt and pepper to taste

If you freeze this, you will need 2 bags. In one bag, place everything except the sauerkraut. In the second bag, the sauerkraut. Defrost in freezer overnight.

Place the sauerkraut on the bottom of the slow cooker, then place the pork chops, and apple/onion mixture on top of that. Cook on low for 6 to 8 hours.

6. Paleo Italian Sausage with Veggies

  • 1 Pound of hot Italian sausage links
  • 1 Large organic green pepper, seeded and chopped
  • 1 medium organic white onion, chopped
  • 1 Can diced tomatoes
  • 4 to 6 Organic minced garlic cloves
  • Italian seasoning to taste

In a small bowl, combine the taco seasoning, olive oil, apple cider vinegar, and water. Mix well. Place chicken breasts in a freezer bag and pour the taco mixture over the chicken. 8.  Paleo BBQ Chipotle Brisket

  • 3 or 4 Pounds of beef brisket
  • 1 Cup of chipotle sauce
  • 2 Cups of beef broth
  • 1 Small organic white onion, diced
  • 3 Large cloves organic garlic
  • 2 Teaspoon oregano
  • ½ Teaspoon ground cloves
  • 1 Tablespoon apple cider vinegar
  • 2 Organic bay leaves

Add everything except the beef and bay leaves to your blender and puree. Pour about ¼ of this puree mix into the bottom of your slow cooker. Trim any excess fat from your meat and place it inside your slow cooker with the fatty side down. You don’t need to leave much fat, just a bit. Pour the remainder of your puree mixture over the top of the brisket. Make sure you cover the sides of the meat as well so they don’t burn. Cook on low for 8 hours.

After cooking, you can pull the meat apart using two forks. It should tear very easily, and will almost fall apart on its own. Pour the sauce from the slow cooker over the meat if you like.
